“What to do with extra Red” WineHack sparked a few extra ideas from readers that were sent in to us. So as a follow-on here are a couple other interesting WineHacks for using up extra red wine.

suggest Spaghetti sauce! Great idea!
Here’s a recipe from a friend of mine:
Basic Spaghetti Sauce Recipe
1 tablespoon Olive Oil
2 Onions chopped
4 Crushed garlic cloves or
15 ounces Tomato sauce
1/2 cup Red wine
1 Sweet green pepper
1 teaspoon Dried leaf basil
1/2 teaspoon Leaf oregano
Heat oil in a large saucpan set over medium heat. Add onions and garlic. Sauté for 2 minutes. Add remaining ingredients. Cover and bring to a boil, stirring often. Then, reduce heat and simmer, stirring often for at least 5 minutes.
From Vivi’s reader Jack, another thing that can be done with left over red and a bit more ambition is to create home brew red wine vinegar! Makes sense since air oxidation of the alcohol (ethanol) in wine will form acetic acid aka vinegar. Its more involved and (obviously) time consuming but if you’re up for it and you use Red Wine Vinegar in your recipes then Linda Baldwin over at GangofPour.com has a comprehensive article on how to do it. There is apparently an article in The Art of Eating magazine on the same topic (Thanks Jack!).
